#  金銀菜豬肺湯

### 做法

1. 把 豬 肺 的 喉 管 套 進 水 龍 頭 中 ， 注 入 水 令 豬 肺 膨 脹 ， 然 後 用 手 擠 壓 排 出 水 分 ， 重 複 數 次 ， 直 至 豬 肺 變 白 色 。 將 豬 肺 用 白 鑊 煮 五 分 鐘 ， 取 出 用 清 水 洗 乾 淨 。
2. 菜 乾 用 熱 水 浸 透 後 ， 清 洗 乾 淨 ， 切 段 。 白 菜 洗 淨 ， 待 用 。
3. 陳 皮 浸 洗 ， 刮 去 瓤 ， 備 用 。
4. 瘦 肉 洗 淨 ， 出 水 。
5. 燒 滾 水 12 杯 ， 放 入 所 有 材 料 ， 用 大 火 滾 20 分 鐘 ， 改 用 小 火 煲 2 個 半 小 時 ， 用 鹽 調 味 即 成 。
