- 鮮蝦 250g /一斤 (最好是海蝦)
- 紅辣椒 1隻
- 百里香 少許
- 薄荷葉 2片
- 蒜 2-3粒

- 咖哩膏/粉
- 椰漿
- 花奶
- 糖
- 鹽

1. 鮮蝦略沖洗乾淨，用牙籤在蝦背去腸，備用
2. 紅辣椒洗淨表面，切成絲，備用
3. 燒熱油鑊，下蒜爆香及起鑊，加入鮮蝦，略煎香兩邊蝦身盛起
4. 原鑊加入咖哩膏爆香，及少量水，煮滾後加入椰漿，百里香及薄荷葉，拌均，中慢火煮若10分鐘待出咖哩香味
5. 加少許糖及鹽調味，煮至收汁前，回放已煎好的蝦拌勻，離火及上碟享用

註：百里香能把食物中的味道拉在一起及有調和功效，它的味道溫和又有抗菌、防腐之效，傳說古埃及把它當成防腐香油的成分之一來保存木乃伊。
