### 🍳 烹飪步驟

1. 馬蹄去皮洗淨，放入塑膠袋用刀背拍碎，再稍微剁成小塊（保留顆粒感口感更佳）🐎。
2. 將 250g 馬蹄粉與 300ml 清水拌勻，過濾掉雜質成細滑生粉漿。
3. 將餘下的 450ml 水與片糖煮滾至完全溶解，加入馬蹄碎續煮 1 分鐘。
4. 關鍵步驟：轉小火，舀出一大勺生粉漿加入糖水中快速攪勻，再將整鍋糖水緩緩倒入剩下的生粉漿中，邊倒邊用力攪拌成半熟糊狀。
5. 準備蒸盤抹油，倒入粉糊抹平。
6. 大火隔水蒸約 20-30 分鐘，直至馬蹄糕由乳白色轉為完全透明的金黃色。
7. 徹底放涼後放入冰箱冷藏至少 4 小時，脫模切片。
8. 食用前用中火將兩面煎至微焦微脆，外暖內爽最為美味 🥘。
