天氣漸漸暖和，春天在中醫而言屬於養肝的好季節，可多食用當令的蔬菜，或是入肝經養肝的中藥材，有助於保健身體；中藥師王儀絜指出，利用新鮮食材做藥食膳，像是蝦仁腐皮捲或是綠意香菇堡等創意料理，都是不錯的選擇。

**動手做蝦仁腐皮捲 健康養生又開胃**

蝦仁腐皮捲做法非常簡單，可先準備包括蝦仁、荸薺、韭菜、薑、香菜、乾腐皮、冰糖等藥食材，沾醬部分可用番茄、麥芽、烏梅、冰糖製成較健康；王儀絜說，沾醬方面只要把烏梅、麥芽打碎後，加入冰糖和水煮上10分鐘，再用小火煮至皮肉分離就可關火，接著將清理好的蝦仁用刀背輕拍後放入容器，並加入調味料，放入韭菜等配料，將腐皮裁剪放置餡料包捲好，慢慢煎到皮呈金黃色即可起鍋。

**韭菜助腎暖腰膝 烏梅可助清熱解毒**

王儀絜進一步說，蝦仁腐皮捲所用的食材，像是韭菜可安五臟除胃熱、助腎暖腰膝，烏梅因為性味酸澀溫，可幫助清熱解毒，加上含有蛋白質、胺基酸等營養成分的蝦，更具養生意義。至於另外一道綠意香菇堡，所用的藥食材包括：豌豆、大棗、玉米、韭菜、豬絞肉、香菇、蛋、鹽、冰糖、香油、太白粉。碗豆性味甘平，可消渴、益中平氣，玉米也可調中開胃，有助於養生。
