#  怕吃到「毒雞蛋」 其實有更好的選擇

「毒雞蛋」風波持續延燒，戴奧辛有世紀之毒之稱，恐造成流產、畸胎、癌症，許多人怕的不敢吃，也無蛋可買！營養師指出，短時間不吃雞蛋對身體影響不大，建議可吃瘦肉、毛豆、豆腐，不但富含優質蛋白質，且膽固醇非常低，營養價值更高。

#### 不吃雞蛋 不會營養缺乏

普遍人每天早餐也愛吃雞蛋，據統計，平均每人每年吃下300顆。醫院營養室主任蘇秀悅表示，一天一顆雞蛋是不少民眾的飲食習慣，一顆雞蛋約50公克，提供7公克的優質蛋白質，但膽固醇含量也很高，約200毫克，建議一天以一顆為限。

#### 瘦肉膽固醇 僅雞蛋20分之1

蘇秀悅認為，短時間不吃雞蛋還不至於造成營養缺乏問題，其實想補充優質蛋白質有更好的選擇，例如1兩瘦牛肉、瘦豬肉、雞肉、魚肉，都含有7公克的優質蛋白質，而且膽固醇含量更低，瘦牛肉約23毫克、瘦豬肉、雞肉約20毫克、魚肉約0至15毫克。

#### 豆腐、毛豆 富含優質蛋白質

若不愛吃肉類，或是蛋奶素的民眾；蘇秀悅主任建議，可以食用黃豆、毛豆及豆腐，半盒豆腐120公克，或是90公克的毛豆夾、2至3湯匙的黃豆或毛豆，也可提供7公克的優質蛋白質，膽固醇含量則是零。 (蘇秀悅 - 台北醫學大學附設醫院營養室主任)
