#  荷葉蒸雞

- 雞 壹隻
- 冬菇 10隻
- 荷葉 2-3塊
- 蔥 2 棵（ 切 段 ）
- 薑 3－6 片（切 薄 片 ）

#### 腌料

芝麻油 2 茶匙、酒 1 茶匙、生抽 2 湯匙, 澱粉 1 茶匙、糖 1 茶匙

- 冬菇浸軟，切片備用(切片較易索味)。
- 洗凈荷葉，荷葉用熱水拖一拖，香味才會出也可令荷葉軟化。
- 將雞斬成小件 (醃雞才會滑)，用生抽、老抽、糖、麻油、酒、薑絲醃最少2小時。
- 將雞放在荷葉中央，加入蔥段、薑片及少許酒。
- 荷葉包好放入鑊，猛火蒸20鐘即成，熄火焗5分鐘。
- 剪開荷葉，趁熱進食。
    也可打開荷葉讓荷葉包內的香氣四散，增加食慾!

提議/ 貼士：這荷葉包是用了5塊荷葉，底包了3塊，左右各一塊，目的是增加多一點荷葉的香味；故在蒸的時間約需30分鐘，另熄火焗5分鐘。
