#  啫啫雞

啫啫雞得名，是因為將煮好的雞倒入燒熱的砂鍋中發出"啫啫"響而取名嗜嗜雞。

- 鮮雞 半隻
- 生薑 一塊
- 蔥 1棵
- 蒜頭 1棵

- 鹽 1 茶匙
- 糖 1 茶匙
- 生抽 1 湯匙
- 米酒 1 湯匙
- 生粉 1 湯匙

1. 鮮雞洗乾淨後斬件，用鹽、生抽、酒、白糖、生粉拌勻，醃約20分鐘
2. 蔥洗淨切段
3. 蒜頭去皮，拍扁備用
4. 薑去皮、切片、拍扁出味
5. 燒熱鑊，下薄油，下薑片、蒜頭爆香
6. 當油鑊夠熱時，把雞肉倒進油鑊，鋪平雞肉
7. 不要翻動雞肉，開中小火，蓋上鑊蓋焗2分鐘
8. 翻轉雞肉，用中小火，再焗2分鐘
9. 把雞肉翻炒，倒進醃雞的醃汁
10. 蓋上鑊蓋煮多約兩分鐘至雞肉全熟
11. 加入蔥段，炒勻，轉大火，煮至醬汁收乾即可上碟; 若有砂鍋， 即可先燒熱砂鍋，將雞件放入享用。
