- 嫩雞半隻 ( 剁件)
- 臘腸一條
- 潤腸一條
- 米三杯 (或適量)
- 薑幾小片

    將雞除去肥油部份
2. 醃雞件：先用生粉把雞件撈云 (令雞更嫩滑)，下糖、生抽，少許紹興酒，麻油醃半小時。
3. 米洗淨，加水放入瓦煲內，(水的份量要比平常略少)
4. 用猛火將米煲滾，即轉慢火，快手放入已醃雞件及臘腸材料。
5. 慢火焗廿分鐘即可，此時即可聞到陣陣"臘腸嫩雞煲仔飯"飯香。
