#  掌握煮"煲仔飯"時間和火力

#### 煮煲仔飯的過程分三個部分：

1. 大火快滾階段、
2. 中火收幹加菜階段（時間極短）、
3. 文火焗飯階段，加菜時間極短我們不必考慮。

注意事項：

- 猛火和文火(中慢火) 兩個階段的掌握：一般的文火焗飯階段至少需要6-10分鐘時間，少於這個時間煲仔飯很難熟透、夾生、(飯焦/飯底燶硬)鍋巴根本沒有，這時間段火力必須採取文火，火力太大煲仔飯下面燒焦上面的飯可能還沒有熟透。
- 鐵鍋導熱性能優良，據測算是砂鍋的3倍。因此用這種鐵鍋煮食煲仔飯在猛火水開階段可以做到只要3-4分鐘（砂鍋為7-9分鐘），大大節約了時間。

#### 貼士：

- 用滾水煮的煲仔飯比冷水煮要速度快。
- 煮得好的煲仔飯需要經過多次實戰研究，煲仔飯的最佳出品才會出現。
