- 茄子兩棵
- 甜梅菜約兩棵

1. 梅菜放筲箕上，再放盆內浸水約 2-3 小時，其間要換水數次去除沙粒，浸軟後洗淨，扭乾水份切去菜頭硬的部份，再切絲或條，再榨乾水份備用。
2. 茄子切件排好在碟上，把梅菜舖於茄子上，隔水大火蒸約十分鐘。
3. 蒸好後灒上熟油即成

- 梅菜因有沙,最好浸水浸過夜後衝洗淨
- 注意: 炒梅菜時不必下鹽，因梅菜巳帶咸，最好用甜梅菜，同時生抽亦會咸，亦可先試梅菜的味道是否恰當，味道隨即加減之
