#  怕腸癌改吃素 補足蛋白質有妙方

癌症時鐘年年快轉，平均每5分6秒就有1人罹癌！專家表示，大腸癌為癌症發生率之首，與都市人不良飲食習慣大有關係，尤其是紅肉、油炸、燒烤等高脂、高油、高熱量食物，更種下罹癌的種子，建議日常飲食最好多蔬果，口味盡量清淡。

#### 大腸癌人數創新高 日增加43人

根據2014年台灣人十大癌症發生人數統計，大腸癌罹患人數共有1萬5764人，平均一天增加43名大腸癌患者。聽聞大腸癌發生人數又創新高，不少人決定改吃素，但又害怕缺乏蛋白質營養素，究竟如何吃素才健康呢？

#### 研究：只吃素蛋白質也足夠

藥學博士楊玲玲指出，根據美國營養協會研究發現，一天內攝取一種以上的蛋白質來源，即使只有植物性蛋白質，也能夠提供胺基酸所需的份量。

#### 豆類、穀類富含蛋白質

楊玲玲強調，不同的植物含有不同的蛋白質，一般人都知道豆類含有大量的蛋白質，其富含的離胺酸與動物性來源類似，其實穀類也含有豐富的蛋白質，為甲硫胺基酸，建議每天選擇2種以上的食材可互補。

#### 多吃天然食物才是健康素

楊玲玲提醒，吃素一定要吃健康素，最好吃天然食物、少吃加工製品，另外，調味盡量清淡，還有油脂的選擇也很重要，建議烹調多使用不飽和脂肪的植物油，對身體較有益。 (楊玲玲 - 佛光大學樂活產業學院院長、藥學博士)
