色香味、營養，可補血、補鈣、幫助排便。

2人份量

準備時間： 5 分鐘 + 煮製需時： 15 分鐘

#### 材料：

- 蕃茄 3 個
- 紫菜 1 塊
- 蒜頭 3 粒
- 米油 1 茶匙/ 一滿蓋
- 雞蛋 1 隻
- 薑片 1 片 (隨個人喜歡)
- 鹽 (隨個人口味)
- 蔥花少許 (隨個人喜歡)

#### 製法：

1. 蕃茄切件；
2. 蛋攪勻備用；
3. 用深底鍋或鑊，大火熱鑊落油後，爆香蒜和蕃茄，加入米油和5碗熱水，煮15分鐘，放入紫菜煮3分鐘後，加鹽調味
4. 熄火，將蛋落在湯內攪勻，享用。

紫菜：可補鈣、鐵等人體必須營養素；紫菜含大量蛋白質，和鈣、磷、鐵、碘、維生素、無機鹽等高營養成分。紫菜中豐富的鈣、鐵可速進兒童、老年人的骨骼、牙齒生長及保健，和改善貧血。素食者可考慮的良好蛋白質獲取來源！
