Salty egg, Tofu steamed Eggs

豆腐，鹹蛋，雞蛋是常見又便宜的食材，變化一下, 放在一起蒸挺新鮮又好吃! 此煮家菜有蛋的滑嫩，加上豆腐的香氣及鹹蛋的小咸味, 伴飯吃非常匹配!

#### 材料：

雞蛋 2個
鹹蛋 1個
豆腐 1塊/磚
水/ 上湯（可用已備雞湯/雞汁/清水）
豉油/醬油 一茶匙
芝麻油 一茶匙

蛋液處理:

- 蛋液比例 ( 水 2: 1 雞蛋) ; 本食譜因有鹹蛋白, 故鹹蛋白算一個雞水, 故用5 個雞蛋殼的水份量
- 將雞蛋，鹹蛋白及加水攪拌均勻成蛋液

#### 做法：

1. 豆腐切薄片塊放在碟底
2. 鹹蛋黃放豆腐上和碟中間，用豆腐墊高"鹹蛋黃"至露出蛋液
3. 將雞蛋，鹹蛋白及加入水攪拌均勻成蛋液 ( 用過濾器篩去蛋中的流質體，出來的水蛋會更滑溜)
4. 將蛋液小心倒在豆腐上和鹹蛋黃的週邊
5. 將蛋液碟放入煮已煮沸水的蒸籠內，轉中慢火共蒸10分鐘便成 ( 也可放入電飯鍋中同蒸也可以)
6. 淋上豉油+芝麻油在蛋表面上上享用

#### 提示：

- ( 切記，在蒸時， 要用蓋放在蛋液上，或可用保鮮膜包起蛋液; 目的是避免蒸餾水滴回蛋液表面而起洞，以破壞表面的平滑)
- 打蛋要左右拌勻，拌去表面的泡泡
- 板豆腐可以捏成泥狀或切薄片塊
