遇到橙正又甜時，可考慮這道香橙煎雞扒，單看便已令人有食慾及開胃。

準備+烹調時間: 約15~25 分鐘

2至3人分量

**材料:**
雞腿肉 375 克
洋蔥 半個
橙子2個
蒜 數顆/粒，大顆可切片

**備用材料:**
上湯（可用已備雞湯/雞汁/清水） 2湯匙
洋蔥，切條或絲
橙片（橙子1個半榨汁，剩下的半個橙子切4~5片裝飾用，作用是吃時可搾入鮮橙汁在雞扒上）

**醃料:**
生抽（醬油）1茶匙
鹽 1/4 茶匙
糖 1/4 茶匙
薑汁 1/2 茶匙
米/紹酒 1/2 茶匙
麻油 1 茶匙
胡椒粉 少許

**汁料:**
橙汁
鹽 1/4 茶匙
米酒 1/2 茶匙

**埋芡:** (隨個人喜歡使用)
粟粉（玉米粉）1茶匙
水 1湯匙

**做法:**

1. 雞腿肉洗淨，用廚房紙抹乾水分。拆骨，雞腿肉用刀背拍鬆，保留雞皮 (作用是煎時保護雞腿不會燒焦及過老)。拌勻醃料，醃15分鐘。

2. 用平底鍋 (pan)中火熱鑊下油，下蒜微爆香，放入雞腿肉放下鑊中，雞皮向下(先煎有皮一面)，轉小火煎至雞皮金黃色，翻轉雞腿肉(可放爆香蒜在雞腿肉上)慢煎至熟透，盛在碟上備用。
3. 原鍋，放入洋蔥以中火炒香，澆入米酒及上湯，用中火煮至汁收乾一大半(濃稠度隨個人，效果是做出一個薄薄的甜酸芡汁)。加鹽及橙汁倒進入略炒15秒熄火。
4. 將汁淋在煎好的雞扒上面，以橙片伴碟裝飾，即成和享用。
