#  香煎豆腐芙蓉蛋

在香港，很多時午餐外食也會吃芙蓉蛋飯，在家中煮，不妨一試"香煎豆腐芙蓉蛋".

3人份 / 20分鐘

**材料：**

- 雞蛋 3 顆
- 豆腐 (板豆腐 一塊/ 盒裝 一盒)
- 蔥花 適量
- 芫茜 適量

**調味料：**

- 鹽 適量
- 白胡椒粉 適量

**預備：**

- 豆腐清洗後切成薄片備用
- 切少許蔥花+芫茜備用（加不加，隨個人）
- 蛋汁: 雞蛋加入鹽攪拌均勻，加入芫茜+蔥花

**做法：**

1\) 熱鍋(pan 平底) 下油，中小火力，將豆腐煎到兩面金黃後

2\) 倒入打好的蛋汁一起煎，要不時轉鍋在火上的平均受熱，免燒焦

3\) 約1 分鐘或待蛋餅煎熟後，撒上適量胡椒粉與蔥花，即可享用.
