一道在高溫天氣時，可幫助消暑的簡單易煮菜色! 用簡單的食材和調味便可做出不一樣的健康料理"紅燒雙菇冬瓜燴肉片"。

烹煮時間: 約20~25分鐘 2~3人份量

****材**材：**
\- 冬瓜 400克/g
\- 新鮮冬/香菇 5~6朵 (可用乾的浸發擠乾)
\- 新鮮草菇 數朵
\- 紅甜椒 1/4個
\- 豬肉片 150克/g
\- 薑片 2~3片
\- 蔥 2 條

**調味料:**
\- 醬油(生抽) 2湯匙
\- 鹽 適量(可用低鹽)
\- 糖 1小茶匙
\- 水/高湯(蓋過食材為準)
\- 雞粉/雞汁/調味粉 適量(想清淡些，也可不加，因豬肉片醃製已有底味)

**材料備料：**
\- 蔥白切小段+綠色部份切粒/蔥花
\- 薑切片
\- 紅甜椒 切小條
\- 豬肉切片
\- 冬瓜去皮切薄片塊狀（容易燜焾）
\- 新鮮香菇去蒂後浸洗（如大朵，可切三片/切厚片狀）

**醃製肉片:**
適量鹽+糖+白胡椒粉+米酒+豉/醬油+芝麻油(醃最少15分鐘)

**做法：**
1\) 熱鍋後加入油、放入薑片略爆香、依序放入豬肉片、香菇、草菇稍為小炒一下後，放入冬瓜在拌炒一下後，加水蓋過冬瓜，大火快滾後調味，加蔥白段，轉中小火蓋鍋蓋開始悶煮。

2\) 悶煮至稍為冬瓜軟爛後 (約10~15分鐘)，滾至收汁、上碟散上蔥花即可。

**提示:**
\- 香菇蒂頭可去可不去，也可放入與材料一起燜煮入味，上碟時挑出不要。
\- 過程中要翻動材料，讓每個部位都均勻入味，也要注意水份蒸發避免燒焦
\- 冬瓜經過醬燒後醬油味道全部被吸收和入口即化

**紅燒:** 是將材料經過湯和水煨、燉或用油炸、煎後加醬油等調味品燒滾後，用中或慢火燒透入味。當中以醬油及糖為最主要的材料。
