#  豆腐鹹蛋冬瓜羹

本湯有清熱降暑、消腫、減少脂肪堆積、預防便秘功效。

2~3人份量 / 烹煮時間：約15分鐘

**材料：**
\- 冬瓜 250克
\- 嫩豆腐 一盒(超市)/一磚
\- 咸蛋 一隻
\- 水/高湯 800ml/毫升

**輔材料：**
\- 薑片 2 片
\- 蔥 一條(切花)
\- 生粉/太白粉/粟米粉 (勾芡用)

**調味料：**(看喜愛加/減)
\- 鹽
\- 白胡椒粉
\- 芝麻油。

**材料(預備)：**
\- 將冬瓜去皮洗凈，切成差不多大小長條塊狀備用
\- 豆腐切成丁(小方塊)
\- 蔥切蔥花
\- 咸蛋：咸蛋黃切小塊(放入湯中滾)和咸蛋白用來打蛋花

**作法:**
1\) 鍋熱將水煮滾，加薑片、冬瓜，轉小火將冬瓜煮軟/全熟(約10分鐘)。
2\) 加入咸蛋黃(約2分鐘)，最後放豆腐煮滾
3\) 加入調味料，用生粉水芶芡(邊攪邊下 / 濃稠度可隨個人喜好)
4\) 最後加入咸蛋白，輕拌勻成蛋花，隨即關火即可享用。
