夏天食譜，豆類是除了瓜類的另一個選擇。將豆角切成粒，加上肉碎炒滑蛋，亦係一家大人也培歡的餸菜。

**材料：**
\- 豆角 150g
\- 肉碎/肉末 100g
\- 雞蛋 3只
\- 蒜米及薑米 少許

**調味料：**
\- 生抽 少許
\- 鹽 少許
\- 糖 少許
\- 雞汁/水 少許(看個人)

**材料(預備)：**
\- 豆角：去頭、去尾，切幼粒，徹底沖洗乾淨，瀝乾備用。
\- 肉碎：用半肥瘦豬肉，洗淨，瀝乾，剁成肉碎/免治豬肉，用生抽、胡椒粉、鹽和砂糖醃製約15分鐘。
\- 蛋液：打發雞蛋，加入鹽調味 (注意肉末已加了鹽調味，份量少許即可，目的是吃蛋時亦有味道)

**做法：**
1\) 熱油鍋(大火起鑊) 放入蒜米及薑米爆香，放入肉碎，以大火翻炒，肉碎變色後放入豆角粒，以大火翻炒2~3分鐘，加入少許清水，炒至乾身
2\) 將(1) 肉碎+豆角粒)倒入蛋漿液中，攪拌均勻。
3\) 將蛋液落鑊，以中火煎成滑蛋，可上碟享用。

**貼士：**
\- 炒滑蛋貼士：中火燒熱平底鑊約 30秒，加入油再燒 15秒，熄火/離火，倒入蛋液，靜止5秒後，用鑊鏟從邊緣將蛋液推向中間，翻炒至大致凝固。

\- 挑選豆角的方法，豆角要夠直及硬身，顏色深綠和帶光澤。
