莧菜的營養價值豐富，加入蒜頭清炒已很美味；本食譜用蛋包起來煎香, 便變身為另一道健康美味的食療。

**材 料：**
紅莧菜 300公克 /約半斤
雞蛋 3 隻
蒜 3 粒切末
蔥 一根切蔥花

**調味料：**
鹽 1/2茶匙
糖 1/4茶匙
香油 適量
雞汁/粉 1/2湯匙

**做 法：**
1\) 莧菜洗淨切段，備用

2\) 雞蛋打成蛋液，備用

3\) 熱鑊/鍋下油，放入蒜末爆香，加入莧菜炒至軟身; 加入調味料(鹽、糖、雞粉和香油)調味；

4\) 將 (做法 3) 倒入(做法 2) 的蛋液

5\) 再用另一鑊，燒熱下油，轉中慢火，將(做法 4)入鑊炒至凝固或微金黃，翻轉煎香另一面

6\) 在面上放些蔥花點綴，即成。

**紅莧菜：**具有解毒清熱、消炎消腫、補血止血、抗菌止瀉、通利小便等功效；民間視莧菜為『補血佳蔬』，亦有『長壽菜』之稱。
