引言：品嚐陽澄湖的大閘蟹確是一大樂事， 在你大快朵頤的同時， 有否想過啖啖美味的大閘蟹， 並不可以隨隨便便的而吃， 當中也有很多需要注意的地方， 那樣才不會敗了吃大閘蟹的雅興， 就讓我們來逐一審視。

####  1) 死蟹不可吃

因為大閘蟹死後，其體內豐富的蛋白質和脂肪會變質，有機會令人食物中毒

#### 2) 未經煮熟的不可吃

生而未煮熟的大閘蟹不能吃，因為其身上有寄生著肺吸蟲及其他病菌，最好將蟹徹底蒸煮20分鐘或以上

#### 3) 忌吃醉蟹

大閘蟹含有各種病原微生物，如肺吸蟲幼蟲及其他病菌，感染度很高，抵抗力很強，單單用黃酒、白酒浸泡成醉蟹，並不能殺死蟹內的微生物

#### 4) 蟹的內臟不可吃

因為蟹的內臟或積存重金屬，多吃會中毒。其中包括蟹的胃、腸、鰓及心：大閘蟹的胃俗稱「蟹和尚」，為三角形囊狀物，在頭胸部前端；大閘蟹的腸子為一條黑色條狀物，裝著未消化食物和糞便；大閘蟹的鰓位於頭胸部兩側俗稱「蟹胰」，上面常有寄生蟲；大閘蟹的心臟位於胸部中央，為一六角形包囊

#### 5) 心血管病患者不宜吃

患有高血壓、冠心病、動脈硬化症等病人，不可吃大閘蟹的蟹膏，因為會令膽固醇水平大幅增加

#### 6) 孕婦忌吃

專家稱孕婦忌吃，因為大閘蟹性寒涼，容易導致流產，為了孩子，還是最好不要吃

#### 7) 不可以啤酒伴吃

啤酒性寒，如果以啤酒送蟹，寒上加寒，容易引起腹瀉，所以最好選黃酒或白酒等性溫的酒類送蟹

#### 8) 不可與柿子、茗茶等同吃

因為柿子、茗茶中所含的鞣酸跟大閘蟹的蛋白質相遇後，會凝固成不易消化的塊狀物，會令人腹痛、嘔吐

#### 9) 皮膚敏感的人不宜吃

若患者吃了大閘蟹，或會出現皮膚紅腫痕癢、皮膚疹、嘔吐、胃抽筋、腹瀉、腹痛等症狀

#### 10) 脾胃虛寒的人不宜吃

因為大閘蟹性寒涼，脾胃虛寒者多食會引起腹痛、腹瀉
