#  冬粉久煮不爛 修飾澱粉只發胖零營養

為什麼許多食物都會加入修飾澱粉，到底什麼是修飾澱粉？營養師王盈堤表示，修飾澱粉是將天然澱粉做化學性的處理，使得某些特性得以加強或持久，還可以提升口感。因天然澱粉的保存期限短，所以許多食品商都會加入修飾澱粉來延長保存期限。正常的情況下，天然澱粉所做的食材烹煮半小時左右都一定會熟、甚至煮到爛掉、糊化。

要怎麼樣挑選天然食物不「中標」呢？王盈堤建議，在購買食品前一定要先參考食品原料、成分標示，盡量避免選購摻有非天然成分的食材；若烹煮時發現有久煮不爛的狀況，就不要食用了。

林口長庚醫院臨床毒物科主任顏宗海指出，修飾澱粉非毒澱粉，毒澱粉是指順丁烯二酸。修飾澱粉是以化學或物理方法來改變食物的結構，目前可合法使用的修飾澱粉有21種。而這些加入修飾澱粉的食物除了可延長保存期外，還可增加口感，但因此類添加有修飾澱粉的食品經過化學處理，已無營養，所以光有熱量，無法提供需要的營養素。

顏宗海說，順丁烯二酸已證實會傷害腎臟，甚至引起腎衰竭；而國內洗腎人口逾七萬人，其中三分之一至今原因不明，推測與毒澱粉等食安風暴有關係。

對此，台灣食藥署食品組高怡婷科長表示，即將對食品工廠進行稽查，若查後確有標示不實部分，依食安法第45條規定罰4-400萬；若摻有順丁烯二酸等非法添加物，則適用同法第49條處7年以下有期徒刑。
