#  精力湯好營養 哪些蔬菜不適合生食？

很多人愛喝精力湯，早上起床喝一杯由新鮮蔬果榨汁而成的精力湯，就覺得精力百倍；然而，有些蔬菜並不適合生食，以免蔬菜中的成分會引起中毒。甚至於在食用生菜沙拉時，也要慎選蔬果，才能吃得營養又健康。

**減肥+抗慢性病+抗癌**

天氣逐漸炎熱，早上起床後，來一杯清涼的蔬果汁，是很多人養生的第一道食療；甚至有很多想要減肥的人，或是有慢性病以及癌症患者，都會在一天的開始，選擇喝一杯由蔬果及堅果調配而成的精力湯，希望藉由蔬果與堅果的營養成分，來促進身體健康。

**十字花科蔬菜不宜生食**

要注意的是，有些蔬菜並不能生食，也就不能打成精力湯來喝；營養師楊承樺表示，尤其是十字花科的蔬菜，例如花椰菜、高麗菜、油菜與芥藍菜，就不能生食，因為這些蔬菜含有硫氰化合物，不煮熟生食時，就會產生毒性，進而會影響代謝。

**蕃茄+胡蘿蔔+雞蛋應煮熟**

楊承樺營養師提醒，要用蔬果製作精力湯，一定要清洗乾淨，以免有農藥殘留的問題；還有很多人會喜歡將蕃茄以及胡蘿蔔打成汁，但是蕃茄與胡蘿蔔應該要有經由油脂加熱，才能吃到茄紅素與β胡蘿蔔素，至於生雞蛋也不宜打入精力湯之中，以免會影響生物素的吸收。
