橄欖油品牌琳琅滿目，究竟該怎麼選擇才對呢？其實除了挑品牌，認識橄欖油產區、認證與品種，並選擇自己喜歡的風味及用途才是最適當的，若能挑選莊園級的橄欖油也較有保障，此外別忘記DOP認證能保障你挑的橄欖油，從原料到製作過程都是出自該產區。

**品種不同 風味大不相同**

根據義大利國立品油專協會品油師的分析，每個品種都有不同的特性，西班牙是全世界橄欖油產量最大的國家，又以安達魯西亞為最大產區，最常見品種為Picual, Arbequina, Hojiblanco, Picudo等等，風味上因氣候風土有所不同，如Picual具有番茄清香與橄欖葉，苦味特徵明顯，Arbequina則有淡雅清香，入口堅果味濃郁，最適合做甜點，各種料理都適用，不苦澀的Taggiasc也是好選擇。

**選購橄欖油五大迷思**

除了品種外，常常有民眾對於挑選橄欖油有些迷思，(1)特級初榨橄欖油（extra virgin olive oil）就一定好嗎？特級初榨橄欖油酸價低、有豐富的果香/青草香、富含多酚類與維生素E、同時又沒有任何負面風味，是最好的。(2) 顏色越綠的橄欖油，價值越高？橄欖油的綠，除了品種的差異之外，主要來自於多酚的含量。果實越生，多酚含量越高，顏色也越綠，但是味道偏青澀、甚至有苦味，相對果香/青草香就較低。(3)：味道越嗆辣，代表品質差？這個嗆辣感其實同樣來自於橄欖多酚，所以理當越嗆辣，代表多酚含量越高，價值也就越高。(4) 單一品種比較好？單一品種相對比較單純。市場上開始流行將多種不同品種混合搾油，美其名是希望風味多元，但是不免懷疑，是否是以低成本的一般風味混合高價值的好品種來降低成本。(5)買越大罐越划算？容量大者，或許單位價格較低，但需要注意保存時間，盡量在一個月之內食用完畢。

**橄欖油保存 避免高溫**

最適合橄欖油保存的溫度為11~18°C，一般建議放在陰涼處或接近地面，避免陽光照射與接近爐火，橄欖油買回來後，建議先取一小杯聞聞看、嚐嚐看，透過自己的嗅覺與味覺來感受橄欖油的價值，特級的橄欖油絕對有讓人意想不到的美味。
