很多人都不愛吃味精，甚至有人會出現所謂的「中國餐館症候群」，但是又有很多婆婆媽媽喜歡用味精，覺得不加味精，菜餚就不夠味；到底味精對人體有何好處與壞處？有哪些人確實是要少吃呢？

#### 味精對人體的傷害並不大

吳家誠, 師大化學系教授, 表示，味精就是麩胺酸鈉，也稱為MSG，是一種麩胺酸的鈉鹽，麩胺酸又名麩酸，是一種胺基酸，但不是必須胺基酸，其實人體本身自然就會產生麩酸，流汗時電解質就有鈉，所以，絕大多數情況而言，味精對人體的傷害並不大。

#### 麩酸是一種神經傳導物質

嚴格來講，麩酸是人體所需要的物質，吳家誠教授表示，因為麩酸是一種神經傳導物質，全世界大約有百分之一的人在食用量過高時會產生敏感現象，因為神經傳導物質增加很多，而會有「中國餐廳症候群」，也就是會產生肩頸僵硬不舒服的感覺，但是一、二小時後會慢消失。

#### 鈉含量高對心血管疾病有壓力

吳家誠說，一餐味精用量達600毫克，就可能發生「中國餐廳症候群」；如果用餐時味精加太多，鈉含量會過高，對有心血管疾病的人會造成壓力，對血壓與腎臟也都不好，而有氣喘者也比教容易誘發氣喘。

#### 一餐吃超過600毫克味精就有問題

大致上而言，味精不是有害物質，吳家誠強調，不論歐美，味精都是可添加的物質，至於一天不可吃超過多少限量，則因種族不同而異，對味精敏感的人，通常一餐吃600毫克就有問題，三餐若是吃1800毫克就偏大；但是正常人承受到3000多毫克也不算量大。

#### 心血管疾病、中國餐廳症候群、氣喘者不宜吃多

值得注意的是，曾有動物實驗顯示，老鼠食用鹽巴致死劑量大約只要6公克，而食用味精的致死劑量則是要15公克；所以，對動物而言，味精不如鹽巴影響大。吳家誠教授則是提醒，雖然麩酸是身體中所需要，但也不要大量，而尤其是有高血壓、心血管疾病、中國餐廳症候群及氣喘病人，就不宜多吃。
