牛肉富含高鐵、高蛋白質，可說是「肉中之王」；但日前美牛瘦肉精、狂牛症問題，讓許多人對食用美牛產生疑慮，就怕吃了有礙健康。

#### 美牛例年僅4例狂牛症

美牛狂牛症有多少起？根據美國肉類出口協會統計，自從2003年12月23日，美國出現首宗狂牛症病例，迄今只有4例。該會行銷經理孫開聖強調，美國食品都遵循「危害分析管制系統」（HACCP），確保食物到消費者餐桌食用的整個過程的衛生安全，避免食品中對健康具有潛在不良作用的物質。

#### 瘦肉精殘留量嚴格把關

除了狂牛症問題外，一般人對瘦肉精也有疑慮。孫開聖經理表示，瘦肉精為乙型受體素，有多達40種，其中美牛飼養過程，前18個月為草飼，18個月至30個月改由草穀混飼，添加含有萊克多巴胺的飼料，可增加瘦肉、減少油脂，目前美國境內的萊克多巴胺容許殘留量為30ppb，國內則是為10ppb，台灣對於殘留量的把關更嚴格。

#### 牛肉富含高鐵高蛋白

台灣專訊:孫開聖經理指出，平均每人每年食用的牛肉量為5公斤，而美國人每人年食用量高達48公斤，其實牛肉的營養價值很高，富含高鐵、高鉀、高鎂，以及蛋白質，是婦女、貧血患者補血的優質來源。

專家指出，目前台灣容許美牛的萊克多巴胺殘留量為10ppb，僅為美國的3分之1，且平均每人每年食用量平均只有5公斤，大可安心食用。
