#  地瓜入月餅 高纖低卡又營養

中秋節習俗吃月餅，象徵一家人團團圓圓，但傳統月餅一個至少5、600大卡起跳，等於吃下一個便當。營養師黃書宜分享「地瓜月餅」，利用高纖維、高營養的地瓜，取代傳統高熱量的蛋黃豆沙內餡，過節吃美食也能養生、不擔心發胖。

#### 傳統月餅熱量高

癌症關懷基金會營養師黃書宜指出，坊間的傳統廣式月餅熱量都很高，礙於色香味及容易保存，可能添加了防腐劑、著色劑、甜味劑、乳化劑等化學添加物，雖然每年只有中秋節才吃，但長期累積對身體恐有不良影響。

#### 地瓜富含膳食纖維

黃書宜表示，秋冬季節盛產地瓜，剛好可以做為月餅的餡料，地瓜富含膳食纖維、類胡蘿蔔素、維生素B群、鉀等營養素，其獨特的黏液蛋白有助維持血管壁彈性，保護呼吸道、消化道，而膳食纖維更可促進腸蠕動、減少便祕發生，可說是很好的養生食物。

#### 養生地瓜月餅這樣做

黃書宜營養師說，地瓜月餅製作方式很簡單，利用水餃皮當作外皮，內餡使用地瓜蒸熟壓成泥，將月餅壓模成形，放入烤箱烘烤約20至30分鐘，放涼即可食用。不只中秋節吃，平時當作糕點，也是健康美味的選擇。
