很多人愛喝抹茶，也愛吃抹茶製成的點心與冰淇淋；殊不知，抹茶的營養成分好多，對健康有很多好處。營養師則是指出，「抹茶」的原料是「碾茶」，碾茶是用春茶製作，而且碾茶是用天然的石磨碾磨成微粉狀，才能稱之為抹茶！

#### 抹茶是由碾茶以天然石磨碾磨製成

洪若樸, 台北市立聯合醫院忠孝院區營養師表示，碾茶要製作成抹茶，會在採摘前的20至30天，需降低日照逐漸增加遮光率，這樣栽培的綠茶葉會呈現濃綠色，苦澀味會降低，而且可讓葉綠素提高60%，胺基酸提高40%， 採摘來的生茶葉經過多道工序後才成為碾茶；而且碾茶用天然的石磨碾磨成微粉狀才是抹茶，否則只能稱之為綠茶粉。

#### 含有水溶性與非水溶性營養素

抹茶有哪些營養成分？洪若樸營養師指出，抹茶是綠茶的精華濃縮，因為有完整的茶葉，不僅可攝取到水溶性營養素，就連非水溶性營養素也能被人體利用；此外，抹茶還富含兒茶素，以及維生素A、B、C、E、K，還有葉酸、鉀、鎂、鐵、多酚等多種營養素。

#### 預防心血管疾病+利尿+改善腸胃功能

如此多的營養成分，使得抹茶對於身體健康就有很大的幫助。洪若樸營養師進一步指出，抹茶具有抗氧化作用，並能穩定血糖，降低血中膽固醇，因而可以幫助抑制動脈硬化，預防心血管疾病，而且能利尿以及改善腸胃功能，甚至能改善口臭與蛀牙。

#### 攝氏80度水溫沖泡

沖泡抹茶也有學問；洪若樸營養師建議，選擇用天然石磨碾磨成微粉狀的抹茶，並且要以攝氏80度左右的水沖泡，溫度太高會破壞葉綠素，用80度水溫沖泡，顏色在半小時或一小時後變淡或變黃，這是正常狀態，若不變色有可能是添加色素。
