#  冬令進補 如何選食材？

冬天適合進補，大家吃來吃去，不是藥燉排骨，就是燉雞，吃這麼多高油脂的食材，可能沒有補到健康，反而補了一身肉；進補時除了會用到中藥材四物、八珍、十全之外，至於進補食材該如何選擇，才能吃得健康呢？

#### 吃湯圓也可補身

進補食材也能有不一樣的喔！中醫師吳明珠指出，冬至時會吃湯圓，而且吃湯圓也可補身，吃湯圓時多會以紅糖或是黑糖加上老薑來驅寒，也有客家湯圓會以蔥、薑、紅蔥頭煮成鹹湯圓，加上韭菜和茼蒿；甚至有豆腐湯圓，紅色的部份是用紅麴，紅麴可活血化瘀，避免心血管疾病發作，並且可以有助活化筋絡，達到暖經暖身效果。

#### 可先以四神與四君子湯來調整脾胃

進補少不了會用到四物、八珍、十全中藥材；吳明珠中醫師指出，四物有當歸、熟地、白芍與川芎，八珍是四物湯加上四君子湯的藥材黨參、茯苓、白朮、甘草，若八珍加上肉桂與黃耆則是十全。當歸可養血活血，但是太燥熱體質就不宜，因為當歸還有滑腸作用，會容易拉肚子；所以，最好是能先以四神與四君子湯調脾胃，先調整好熱象，再來吃四物。

#### 感冒及女性生理期不要進補 慢性病人最好是清補

吳明珠進一步指出，全家人可以用羊肉(或依喜好使用雞肉或豬肉)燉十全來進補，但若是感冒、女性生理期就不可以吃；而且對於有痛風、乾癬、高血壓與糖尿病的慢性病人，最好是清補，並且不要用麻油，可用苦茶油，至於薑與蔥則是可用，能夠預防感冒。食材可用茼蒿、菜心、蓮藕、南瓜及黑木耳，黑色的烏骨雞也是補腎的好食材，或是吃些紅豆、桂圓與紅棗。
