現代人工作好忙碌，許多雙薪家庭過年沒時間準備，多會購買冷凍年菜，只要簡單加熱，就是一桌豐盛美味的佳餚。專家提醒，購買冷凍年菜時，應選擇包裝完整且沒有覆蓋大量結霜，比較新鮮、衛生。

#### 儲存、運送環境不佳容易變質

陳詩璋, 台灣漁業經濟發展協會秘書長指出，大部分的冷凍年菜由中央廚房生產，事先經過高溫烹煮後、再急速冷凍。若冷凍儲存過程中條件不佳、或運送過程造成產品短暫回溫，都可能造成食物解凍而變質，甚至腐壞。

#### 大量冰晶結霜、血水勿購買

陳詩璋表示，選購冷凍年菜食品時，應觀察食品包裝是否完整密封良好，並注意有效日期，可觸摸產品表面，選擇凍結狀態堅硬、無軟化；若有發現解凍、大量冰晶結霜，或是肉禽類有大量血水、脫水乾燥及冰塊殘留，則不建議購買。

#### 冷凍年菜 食用應徹底加溫、避免反覆加熱

陳詩璋強調，食用冷凍年菜前，一定要徹底加溫，以免細菌殘留，烹調後應儘速食用，建議於2小時內食用完畢，也要避免反覆加熱，以免食物產生毒素，而加重身體負擔。
