#  火鍋可別反覆加熱 恐傷身致癌

火鍋是最受歡迎的料理，有人會到店家享用，也有人習慣在家自己煮，但多數人都會打包湯底，或是下一餐加肉、加菜繼續吃。不過，專家提醒，葉菜類的硝酸鹽含量高，反覆加熱容易形成致癌物，建議多吃新鮮蔬菜可阻斷形成亞硝胺。

#### 致癌物亞硝胺 可能引起腸胃道癌症

香腸、火腿等加工肉品含有亞硝酸鹽，在腸胃中容易產生致癌物亞硝胺，世界衛生組織甚至將香腸、火腿，與香菸並列為第一級致癌物。根據研究顯示，過量食用可能引起腸胃道及肝臟的癌症。

#### 新鮮蔬菜抗氧化 阻斷亞硝胺

許惠玉, 董氏基金會食品營養中心主任指出，吃火鍋最容易有反覆加熱的問題，而葉菜類同樣含有豐富的硝酸鹽，若一直煮會形成致癌物亞硝胺，吃了多恐有害健康，建議多吃含有抗氧化物多酚、維生素C的新鮮蔬菜，可阻斷硝酸鹽變成亞硝胺。

#### 處理蔬菜食 應先洗再切

許惠玉表示，過年即將到來，年菜通常少菜多肉，建議採買年貨時，多購買新鮮蔬菜，最好選擇容易保存的根莖類、菇類、玉米筍等，可以加入各類料理中。另外，處理蔬菜食應先洗再切，可避免營養素流失。
