#  慢性病友掌握食物代換原則 健康過好年

闔家團圓的年節，親朋好友相聚時難免零食、點心不忌口。過度精緻且過量的年節飲食，但其中卻暗藏高鹽、高油、高普林、高熱量的危機，可能會造成身體沉重的負擔。對慢性病友來說特別是一大挑戰。吳澤誠提醒慢性病友們年節期間仍要掌握食物代換的選擇原則，避免暴飲暴食！

#### 5個慢性病有過年飲食小叮嚀

針對各種慢性病友過年期間飲食，吳澤誠局長提出5個需注意的小叮嚀：

1\. 遵循飲食計畫、定時定量、避免太鹹、太甜及油炸的食物。

2\. 以低鹽、低脂、低糖、高纖為主，避免暴飲暴食及過食辛辣的食物，飲酒要適量。

3\. 避免食用勾芡或帶有湯汁的食物，最好濾掉湯汁。

4\. 多選自然的食物、少用加工品。

5\. 烹調簡單，勿使用過多的調味品，以免增加身體代謝的負擔；烹調方式盡量以蒸、煮、滷、烤、燉、涼拌為宜。

#### 美味健康創意年菜這樣做

孫瑞蓮營養師提供兩道美味又健康的創意年菜做法。

#### 年菜1、延年益壽

材料：芥菜500公克、干貝5顆、金針菇或金滑菇100公克、白果10顆、薑片10公克、蒜片10公克、高湯300㏄

調味料：米酒、鹽、糖、蓮藕粉、香油

做法：

1.干貝洗淨，加入米酒泡軟，放入蒸鍋中蒸約30分鐘，取出壓成絲，備用。

2.芥菜洗淨、切塊，在滾水中加入少許鹽和沙拉油，將芥菜放入汆燙至熟，撈出浸泡入冰水待涼，再撈出瀝乾水分，備用。

3.熱一炒鍋，加入少許沙拉油，放入蒜片、薑片爆香，接著加入高湯煮滾，挑出鍋內的蒜片和薑片後，再放入作法1的的干貝與切細段的金針菇、白果及所有調味料、作法2的芥菜煮勻，最後以蓮藕粉水勾芡，再淋上香油即可。

#### 年菜2、年年有魚

材料：鯛魚片300g、板豆腐（或嫩豆腐）300g、青蔥1隻、辣椒1隻、薑絲少許

調味料：蒸魚醬油2大匙、米酒1大匙、香油適量

做法：

1.把嫩豆腐直接從盒子背面切成一半取出，放在手心上先順著背面紋路切，平鋪在盤子上。

2.把鯛魚先加些米酒，平鋪在豆腐上，再加入蒸魚醬油，最後把切好的薑絲平鋪在魚肉上

3放入蒸籠蒸約15分鐘後放上青蔥、辣椒絲，加入少許香油再蒸約30秒即可。
