#  高血脂病友 吃佛跳牆要注意油炸陷阱！

每到農曆春節假期，餐桌上難免有佛跳牆、火鍋等年菜佳餚。營養師張斯蘭表示，佛跳牆常有炸芋頭、炸鳥蛋等油炸食物，高血脂病友吃佛跳牆時，建議盡量避開這些油炸食物，以免攝取過多油脂。

**油炸、加工肉品 少吃為妙！**

張斯蘭也提醒，高血脂病友吃火鍋時，也要避免吃丸子、餃類等加工肉品、加工食品，這些加工食物不只鈉離子很高，油脂含量也很高，火鍋湯底也是一樣，湯不但含有鈉離子，本身也很油，高血脂病友不宜多吃。

**哪些食物有助控制膽固醇、血脂？**

美國梅約醫學中心表示，燕麥等高纖維食物，或者像魚油、Omega-3脂肪酸、杏仁、堅果、橄欖油等食物，搭配規律運動，也都對降血脂、降膽固醇有幫助。

以燕麥來說，燕麥含有水溶性纖維，可以幫助減少「低密度脂蛋白」（LDL-俗稱壞膽固醇）濃度，除了燕麥，其他像蘋果、水梨、大麥、李子等食物，也都含有水溶性纖維。

**水溶性纖維、堅果 對降血脂很有好處**

外國醫學專家解釋，水溶性纖維可以減少血液膽固醇吸收，每天吃5到10公克以上水溶性纖維，有助減少總膽固醇、低密度脂蛋白指數。舉例來說，二分之一杯煮熟的燕麥就能提供6公克的纖維，若在燕麥加進香蕉，就能多加4公克以上的纖維。

另外，核桃、杏仁與其他堅果類食物等，適量攝取，也可以改善膽固醇指數。像核桃就含有豐富的單元不飽和脂肪、多元不飽和脂肪，核桃也能幫助維持血管健康。建議一天吃一把堅果（約1.5盎司、42.5公克），或可減少心臟病風險。不過要注意的是，吃堅果盡量選擇原味，不要再額外添加鹽份、糖份。
