#  愛吃樓梯、口香糖滷味嗎？ 這樣吃才健康

台灣飲食特稿! 你喜歡吃「樓梯」和「口香糖」滷味嗎？原來南部人將蘭花干滷味稱之為「樓梯」，因為其一條一條的狀似樓梯，且由於鴨腱腸口感很有彈性，因而有「口香糖」一說，還真是很有創意的名稱；不過，在選購滷味時，也應該要懂得搭配，才能吃得健康！

#### 以滷味為正餐 要注意食物分類

滷味可說是很好吃的食物，除了是小吃，也可以當正餐，而在選擇菜色時，商家甚至會有幫你搭配好A餐或是B餐。台北市立聯合醫院營養科營養師周千欽表示， 吃滷味會推出套餐方式，例如王子麵、青菜或是豆干，就會有人以此做為正餐，其實是可以，但是也要注意其食物分類。

#### 澱粉、蛋白質與蔬菜都不可少

周千欽營養師指出，如果將滷味當成一餐，吃正餐時就要有澱粉、蛋白質與蔬菜膳食纖維，例如主食部份有王子麵、冬粉與河粉，也有人會吃豬血糕與芋粿，這也可做為主食；而主食部份有很多是油炸過，例如王子麵，這時就可換成冬粉或是拉麵，減少油脂含量。

#### 蛋白質以腱子肉或豆干熱量較低

至於蛋白質肉類最好是選瘦肉，但也可選豆干或是素雞與豆皮。周千欽營養師提醒，有「樓梯」之稱的蘭花干，雖然也是豆製品，但卻是油炸過，還有百頁豆腐的熱量也較高，所以在吃滷味時，選擇蛋白質的部份，還是以腱子肉或是純豆干的熱量較低。

#### 蔬菜越來越多可選 滷汁熱量也不低

以滷味當正餐時，蔬菜也應該要吃。周千欽營養師建議，可選金針菇、海帶，或是青江菜與花椰菜，而且目前滷味的蔬菜越來越多，有很多種類可以選。此外，有時店家會在搭配好菜色之後又再淋上滷汁，但是滷汁熱量也不低，最好不要加太多，而且也會有酸菜等調味，都應該儘量少用為宜。
