#  味精究竟有沒有毒？ 專家：適量攝取無毒性

傳統觀念認為味精恐帶有毒性，吃太多會引起身體不適，為了解開這大半世紀的謎題，食藥署邀請葉安義特聘教授，張月櫻秘書長，向民眾解釋味精用處，解答在使用味精上的疑惑。

#### 只要正常食用 味精並無毒性

毒又指健康的風險，毒理學家以每日容許攝取量，簡稱ADI，解釋每個物質的健康風險高低，若ADI值愈高，表示每日可以攝取量較高，換言之，健康風險就越低，像是水的毒性很低，除非沒有限制的飲用，就可能造成死亡，否則正常飲用水，並無任何毒性。

#### 味精毒性低 民眾可放心使用

味精學名稱**L-麩酸鈉**，由日本的化學家池田菊苗博士從海帶浸泡液中分離出來；聯合國組織FAO/ WHO食品添加物聯合專家委員會安全評估，給予L-麩酸族的ADI值是沒有特定值，顯示此物質毒性低，只要適量使用，並不會對健康造成傷害，且就算懷孕，母體中的麩酸也不會影響到胎兒，雖有專家委員會仍呼籲要小心味精在嬰兒食品運用，但像歐盟和美國都有類似結論，因此仍可放心使用味精。

#### 對味精過敏 只要少吃就能改善

有部分人食用味精後一小時，出現口渴、脖子、上肢等部位灼熱或發麻感、頭痛等症狀，又稱味精症候群或中國餐館症候群，屬於食品不耐性，專家認為比起過敏反應可能會致命，食品不耐性，只要少吃、不吃、混吃或營養療法，就能有效改善。

#### 料理使用味精 切記不要過量

雖味精已被國際確認無害，製造方法也認定為天然，但在料理上常用的量為0.1至1.0%即可，切記不要過量，因食材本身已含有的L-麩酸，加上若含有味精的L-麩酸類物質和核甘酸類物質混和，恐有加成作用，會使鮮度增加數倍，反會使過敏族群症狀加劇。 (葉安義 - 台灣大學食品科技研究所特聘教授，張月櫻 - 臺灣國際生命科學會秘書長)
