#  天熱食物易腐敗 冷熟食保存怎麼做？

夏天氣溫動輒攝氏30度以上高溫，食物在室溫下很容易腐敗！坊間不少餐飲業者，不時傳出食物被檢出大腸桿菌超標的新聞事件，讓民眾食不安心。

專家指出，食物在室溫下超過半小時，細菌就會開始孳生；若超過2小時，就不建議食用，以免容易發生食物中毒，可能上吐下瀉。

**食物保存溫度不當 容易孳生細菌**

主廚吳長芳表示，一般餐飲業者將食物分成及時冷食、熟食或是現煮食物，其中及時冷食、熟食都容易有保溫的問題，例如常見的一盤盤小菜、滷味，或是自助餐料理、便當等，當食物的保存溫度不適當，就容易孳生細菌。

**冷食低於攝氏7度 熟食高於攝氏65度**

攝氏30至40度是最適合細菌孳生的溫度，也就是普遍夏天的氣溫，建議及時冷食的保存溫度，應低於攝氏7度，最好的存放方式就是使用冰箱；而熟食的保存溫度，則應高於攝氏65度，可利用隔水加熱的控溫方式，若可以加蓋保存效果更佳。

**食物室溫逾2小時 不建議食用**

吳長芳提醒，食物在室溫下，30分鐘就會開始孳生細菌，尤其天氣越炎熱，細菌繁殖的速度也越快，當食物放在室溫超過2小時以上，即使嚐起來沒有酸臭味，也可能已經腐敗了，最好不要輕易食用，以免有害身體健康。
