  |  | \| \\| --- \\| \\|:--\\|---\\| \\| ![](https://foodno1.com/images/stories/food-image/fried-fish.jpg) 我喜歡吃魚，因為迷信吃魚不容易胖，這對於急於減肥的我，是一種既能吃肉又不破了自己減肥誓言的折衷辦法。        以前吃魚，要麼紅燒，要麼清蒸，要麼清燉，總之一次只能感受一種味道。直到有一天我發明了一魚兩吃的辦法。        收拾魚，比較麻煩，我喜歡把魚鰭等一律剪下，然後掏乾淨內臟、魚鰓，用薑擦一下魚身，再用料酒醃一醃，擱置在一邊。蔥姜蒜自然也是必備的。一般薑切片，蔥則分為兩種，一部分切段，一部分切成末。   ### 如何煎魚   加入少許油，文火，燒至七成熱，用薑片擦一下鍋，投魚入鍋。給魚翻身不能太心急，否則鍋底很容易留下魚皮，影響美觀，所以一定要掌握好火候。等魚煎得有幾分熟了，就盛出來。  ###     如何煲魚湯   下麵是做湯。先洗一下鍋，否則會有黑色的東西漂在湯麵上。加水，再倒入魚、蔥薑蒜、料酒，煮沸，湯會逐漸呈現出乳白色，加鹽、味精，起出。這樣的湯很好喝。  ### 煮紅燒魚   最後該是做紅燒魚了。先加入少許油，放蔥薑蒜、醬油、糖煸炒，再把燒得差不多的魚放入鍋中，加水，等開了，再給魚翻一下身，再燒一下，就可以起鍋。        這樣吃魚，既可以喝到新鮮可口的魚湯，魚又做得比較有味道，不那麼清淡，也算是一舉兩得了。      鈞華 \\| \| \|---\| |  | --- |  | \|  \| \|---\|---\|---\|---\|---\| \|  \| \|  \| \|  \| \|  \| \|  \| \|  \| \|  \| \|  \| \|  \| |
