| - 鰻魚2條、水2杯，醬油1/4杯、清酒（料酒）2大勺、白糖2大勺、蘋果1/2個、洋蔥1/2個、辣尖椒2個、生薑1塊、尾參20g |

| - 將鰻魚去頭，剖腹去內臟，取出骨頭後，魚身切成5~6cm長的塊。取一隻鍋，裏面加水後，把鰻魚脊骨折成小段，連同洋蔥、蔥根、蘋果、辣尖椒、生薑、醬油、清酒一起放入鍋裏燉，水分收縮至一半時，加入尾參繼續燉，直到水分再次減半，這樣就做成了濃稠的調味醬汁。將鰻魚放到烤架上，一邊烤一邊在魚身上塗抹醬汁，正反兩面，反復塗抹三次。 |
