| - 鮮參2根、雞湯4杯、人參油2茶匙、洋蔥末1/2杯、各種蘑菇60g、粳米1/2、糯米1/2杯、黃油2茶匙、白葡萄酒（或清米酒）1/2杯、帕爾馬乾酪粉1/4杯、鹽、胡椒各少許 |

| - 將熬湯用過的人參撈出切碎，放入雞湯裏用小火充分燉煮。取一隻煎鍋， 先用人參油將洋蔥炒香後，放入蘑菇翻炒，然後加入米和糯米炒約5分鐘至米粒呈透明，接著慢慢倒入半杯雞湯，同時鍋內的米要不停地攪拌，待米粒吸收湯汁發開，鍋裏的水分漸幹時，倒入餘下的雞湯繼續攪動，同時加入黃油、葡萄酒和乾酪粉，最後以鹽和胡椒粉調味後起鍋。另取一隻煎鍋，上面撒一層乾酪粉，加熱冷卻後，將象鍋巴一樣粘在一起的乳酪取出放在炒好的米飯上面即可。(這裏要特別注意的是火不要過旺，否則乾酪粉會化得像油一樣流淌) |
