| - 直徑5cm的(海綿)蛋糕托2個、糖漿2茶匙、高麗參粉1茶匙、未打散的人參果醬1/2茶匙 - 奶油凍原料: 打散的人參果醬3茶匙、淡奶油(鮮奶油)1/2杯、明膠1張 - 海綿蛋糕原料： 雞蛋5個、白糖125g、薄力粉110g、高麗參粉20g |

| - 取一隻圓形蛋糕托，裏面放入牛油紙，用膠帶固定住，油紙要高出蛋糕托厚度的一半。取1片海綿蛋糕放進去，將糖漿（將水和白糖按相同的比例放在一起熬至白糖完全融化)和高麗參粉混合在一起，倒1/2在蛋糕上，抹平，再倒入1/2的奶油凍，然後再鋪一片蛋糕，餘下的糖漿、人參粉及奶油凍按同樣順序加上去，然後放到雪櫃製冷。從雪櫃中取出時上面覆以一層人參果醬作為裝飾。 |

| #### 奶油凍的製法： |

| - 明膠置水中泡軟後，取出放進鍋裏加熱，融化成液態時，放入人參果醬拌勻。鮮奶油打發膨脹至2倍程度時，將明膠和人參果醬的混合物拌入即成。 |

| #### 海錦蛋糕的製法： |

| - 雞蛋和白糖混合後隔水加熱打發，即將打蛋容器坐在裝有熱水的盆子裏，同時用打蛋器不停攪打讓空氣進入使之膨脹。待顏色漸漸發白，膨脹有3~4倍程度後將預先準備好的麵粉和人參粉的混合物分兩次攙入攪拌均勻。（注意和麵糊時一定要維持雞蛋的膨脹狀態，只有這樣才能作出綿軟的蛋糕）。將糊料倒在抹了黃油(食用油亦可)或墊了牛油紙的烤盤上，攤平，送入預熱到180~190℃烤箱，烤約10分鐘左右至蛋糕呈黃褐色，涼後取出即可食用。 |
