#  意式人蔘餃佐油炸甜椒

- 煮熟的扁豆(四季豆)1杯
- 人參Confit2根
- 人參油1/4杯
- 陳年義大利醋(Balsamic Vinegar)1茶匙
- 乳酪粉1/4杯
- 歐芹末1茶匙
- 鹽、胡椒粉少許
- 餃子皮20張
- 雞蛋蛋白

#### 澆頭：

- 帕爾馬乾酪4茶匙、歐芹末1/2茶匙、Confit用紅甜椒(紅色柿子椒)1個

- 義大利餃(Ravioli)餡：煮熟的扁豆1杯、Confit人參2根、人參油1/4杯、陳年義大利醋1茶匙、乳酪粉1/4杯、歐芹末1茶匙、胡椒粉少許
- Balsamic褐色奶油沙司/調味汁：奶油100g、陳年義大利醋(Balsamic Vinegar)4茶匙
- 將 甜椒放進鍋裏，倒入油一起煮， 油量要足夠將甜椒淹沒。煮沸時，改用文火繼續煮30~40分鐘左右，這樣就成了Confit 甜椒。準備餃餡時，將材料放到絞肉機裏絞碎後，放入調料拌勻，味道要調得稍微鹹一些。取一張餃子皮鋪平，上面放一茶匙的餡料。餃子皮的周邊塗上蛋白後，覆 蓋上另一張餃子皮，沿著邊緣轉圈摁下去，將兩張餃子皮縫合在一起。須注意的是縫合時空氣要完全排出，不要留有氣泡在裏面。在煮餃子之前，先在沸騰的貽d水 裏放少許鹽，然後下餃子。將Confit好了的甜椒皮剝下來後，從上方開始向下剪出五瓣，如花朵狀展開擺放在盤子裏，上面放入煮熟的餃子。最後在餃子上淋 上沙司，撒上乳酪粉， 點綴上歐芹，即可上桌
- Balsamic 褐色黃油沙司的制做：將黃油放進煎鍋熬至顏色漸漸呈黃褐色時，放進義大利巴薩米克醋即可
- 人參Confit 的制做：Confit是指將材料浸在沒有雜質的油中用文火加熱30至40分鐘將其煮熟的一種烹飪方法。人參、蒜、大辣椒等都可以用來制做Confit。加工人參Confit時，根據人參的大小，一般按3、4根人參使用一杯油的比例進行
