#  清蒸人蔘野菜

#### 主材料：

- 鮮參1根、西葫蘆2個、茄子2個、香菇5個、牛肉10g、煎蛋餅1張香菇

#### 牛肉作料：

- 醬油1大勺、麻油1/2大勺、白砂糖1/2大勺、蒜末1/2大勺、胡椒粉

#### 調味汁：

- 西葫蘆邊角料、剁碎的蝦醬1大勺、蒜末1小勺、搗碎的蘇子1小勺

- 西葫蘆上灑些細鹽，茄子則在淡鹽水稍醃一下。
- 香菇和牛肉切絲後拌上調料，煎蛋餅和人參切絲，一併用做澆頭。
- 將澆頭放到西葫蘆和茄子上，在籠屜裏輕蒸一下。
- 西葫蘆的邊角料磨碎後在小火上煮，燒開時，下入剁碎的蝦醬、蒜末、搗碎的蘇子做成調味汁，倒在盤底，然後將蒸好的茄子和西葫蘆移入盤中。
