#  烤鱈魚佐人蔘炒蔬菜

- 西葫蘆1個
- 紅甜椒1個
- 鮮參2根
- 洋蔥1個
- 蒜4瓣
- balsamic義大利醋1/2茶匙
- extravirgin低酸性純橄欖油1/2杯
- 人參粉1茶匙
- 鹽和胡椒粉各少許

- 將西葫蘆中間有子的部分掏出，切成長5cm、厚5mm的條。甜椒和人參也切成同樣的大小
- 洋蔥二等分後也同樣切條
- 蒜切成薄片。將切好的蔬菜分開來炒，下鹽和胡椒調味
- 蔬菜炒好後合在一起拌勻在室溫下放置約2個小時，待用
- 將鹽、胡椒和人參末撒在鱈魚上，入味後，在熱煎鍋裏灑上油，兩面煎出來。（如果魚塊較厚，可先在烤箱裏烤至九分熟後再煎。）
- 將炒好的蔬菜再次下鍋，快速炒出，鋪在盤底，鱈魚放上面
- 最後在剛剛用過的炒菜鍋裏放1茶匙橄欖油加熱，滴入 balsamic義大利醋後立刻澆在鱈魚上，這道料理即完成

- 因魚在旺火下會收縮變硬，所以在肉熟、撤火後，不要立刻裝盤，在尚有餘熱的鍋裏多放置3~5分鐘緩一緩味道會更好
