#  西式生拌牛肉片佐人蔘絲

- 牛肋間肉100g
- 鮮參(參身)2根
- 人參油1茶匙
- 鹽、胡椒、檸檬汁、蒜汁各少許
- 剁碎的醃黃瓜10g
- 歐芹末5g
- 洋蔥末10g
- 雞蛋1個
- 人參油和麻油各少許

- 將牛肉切成5mm厚的片，放入1茶匙人參油、少許的鹽、胡椒、檸檬汁和蒜汁一起拌勻。剁碎的醃黃瓜、歐芹末、洋蔥末各取1茶匙擺放在盤子的一邊。雞蛋煮熟 後，取蛋白剁碎，蛋黃用篩子磨成絲狀，也各取1茶匙擺在盤子上。
- 人參切成細細的絲，置水中浸泡10分鐘後，取出控幹水待用。將牛肉片放在直徑5cm，高 3cm的環裏壓成圓餅狀，取出放在盤子上，上面放上足量的人參絲。
- 上菜前在盤子的間隙裏灑上人參油和麻油。所有材料拌勻後即可食用。
