![SnakeS](https://foodno1.com/images/news/SnakeS.JPG)秋風起三蛇肥， 在香港食蛇是驅寒的最佳美味 ， 傳統上， 蛇羹通常是由兼營食店的蛇鋪販賣， 蛇羹據稱可加速血液循環並驅除寒氣。 以菊花和草藥為蛇肉帶來甜味， 並將蛇肉剁絲， 讓上菜時看不出它原本的形狀， 令食客心理上少了對蛇的抗拒。

若你不怕步驟繁複，也可在家中做一頓蛇羹給家人品嚐。

- 蛇肉 6兩（約240克）
- 雞肉 3兩（約120克）
- 瘦肉 2兩（約80克）
- 發水魚肚 3兩（約120克）
- 發水冬菇 1兩（約40克）
- 發水木耳 1兩（約40克）
- 薑 2兩（約80克）
- 檸檬葉 2塊
- 陳皮 若干

- 上湯 7杯
- 老抽 適量
- 鹽 適量
- 胡椒粉 適量
- 芫荽 適量
- 薄脆 適量
- 菊花 適量

1. 買蛇時請蛇店代宰及起肉去骨，家庭用的一大碗蛇羹，約需200克去骨蛇肉
2. 用蛇骨熬湯，先把蛇骨出水，再把適量水煲滾，放下蛇骨及薑煮約3小時，用紗布濾清蛇骨
    (另一煮法是用較少水熬蛇骨1小時，倒出蛇湯，再加水熬，如是者3次)
3. 把蛇肉煲熟，取起等它冷卻後，拆絲，再放入先前已煮好的蛇骨湯內，煮約一小時
4. 雞肉、瘦肉、魚肚、冬菇、木耳及薑均切成絲，陳皮浸軟後刮囊切絲
5. 將上湯煲滾，把雞肉等各種材料放入，煮1小時後撈起，放入先前已煮過的蛇湯及蛇肉內，再煲15分鐘
6. 此蛇肉湯調味後，再用老抽調至金黃色澤，並以生粉加水打芡，加上胡椒粉、檸檬葉絲、熟油、麻油、薄脆、菊花、芫荽即成
