### 醬汁

- 蒜（完全切碎）1 瓣
- 長紅椒（連籽切碎）1隻
- 薑（去皮及完全切碎）1片 (3厘米)
- 糖 1茶匙 生抽 150毫升
- 味醂（日本煮食用米酒）2湯匙
- 米酒醋 1湯匙

1. 將所有材料放入小碗並拌勻，直至糖完全溶解

#### 蜆肉製法

- 大蜆（未煮熟）12隻
- 味醂（日本煮食用米酒）80毫升
- 白糖 1茶匙
- 小青瓜 1條
- 青蔥（切成薄片） 6條
- 烤芝麻油 1 1/2茶匙

1. 打開蜆殼，只保留連肉的一邊，放進蒸鍋
2. 將味醂混合糖，直至糖完全溶解
3. 將少量味醂和糖加入蜆，蒸2分鐘後，放入雪櫃
4. 將青瓜去皮，切成長條細絲
5. 上菜時，在每隻蜆上灑上少量烤芝麻油
6. 將醬汁灑上蜆，用青瓜絲點綴，及放上青蔥
