#  涼拌金針雲耳

**雲耳:** 質地柔軟，色澤黑褐，營養豐富，味道鮮美，可素可葷，能養血駐顏，令肌膚紅潤，並可防治缺鐵性貧血及其他藥用功效。

**金針:** 據本草綱目載，金針花含大量蛋白質及鐵質，營養價值高，亦有造血、補血、強壯臟腑機能及利尿、止血、消腫之作用，是食療與美味兼具的好料理。

#### 材料:

雲耳2一5克，金針5一10克，辣椒2只，香菜2棵，陳醋，生抽，雞粉(一茶匙)，香油(芝麻油)，鹽(一茶匙)。

做法:

1. 將雲耳泡水約20一30分鐘，金針泡水約5一10分鐘。
2. 燒好開水(約2000毫升)，加入粉和鹽。將已泡好的雲耳，金針一起飛水，時間約3分鐘起鍋。
3. 起鍋後加入陳醋三湯匙，生抽約十湯匙，香油一湯匙，將切好辣椒，香菜一起伴勻即可食用。
